Hello, friends aaj hum aapke sath share karne wale bohot he zyada pasand ki jaane wali ek non-veg recipe. Jise bola jata hai, chicken biryani. Aaj jo hum chicken recipe aapko batane ja rahe hai wo hai chicken biryani dum haydrabadi style me. Chaliye shuru karte hai:

Ingredients

Chicken(1 ½ inch pieces)           1 kg

Basmati rice(soaked)                  2 cups

Ginger paste                              2 tbsp

Garlic paste                               2 tbsp

Salt                                            to taste

Turmeric powder                      1 tbsp

Red chili powder                       1 tbsp

Green cardamom powder         1 tbsp

Yogurt                                        2 cups

Fried onions                              1 cup

Fresh mint leaves                       ½ cup

Fresh coriander leaves(chopped) ½ cup

Caraway seeds(shahi jeera)        ½ tbsp

Black peppercorns                      10

Cloves                                          6

Cinnamon stick                            1 inch

Green cardamom                         5

Black cardamom                          1

Saffron                                         8 strands

Kewra water                                 1 tbsp

Rose water                                   1 tbsp

Butter                                           2 tbsp

Wheat flour dough (atta)             to seal

Procedure

Rice –

Masala potli

Sabse pehle aap jis jis bartan me chawal pakana chahte hai use gas par 2 cup ke hisab se pani dal kar rakh le. Pani garam hone ke baad usme swad anusar namak or shahi jeera dale. Aakhir me pani me 1 ghante tak bhigoye hue basmati rice dal le. Abe k malmal ke saf kapde mei kali mirch, laung, chloti elichi, badi elichi or dal-chini le. In sabhi chizo pe ganth laga kar ek potli bana le or chawal ke pani me dal le.

Chawal ko ek bar beech me check kare or jab wo pakne he wale ho unhe ek bartan me nikal le. Or chawal ka pani bhi chan le.

Tips:- Masale ki Potli ko chawal ke pani me dalne se pehle 3-4 bar belan se use pite taki uski khushboo ache se aaye chawal me.

Chicken ka bowl le, usme ginger or garlic paste dale. Namak swad anusar, haldi, lal mirch powder or uske sath sath choti elichi powder dal le. Dahi, pudhine or dhaniye ke patte dale, uske bad kuch fried onion bhi dal le. In abhi chezo ko achi tarha mila le.

Tips- Is chicken ko 1 ½ – 2 hours tak marinate hone ke liye chor de.

CHICKEN BIRYANI

  1. Aap jis bhi bartan me biryani banana chahte hai use le.
  2. Ab bartan me marinate kiya hua chicken dale or use ache se faila le.
  3. Ab uske upar wo chawal dale or ache se spread kar le.
  4. Thode fried onion dale chawal ke upar.
  5. Kuch pudhine ki pattiya or elichi powder dal le.
  6. Milk le usme kesar dal ke thoda garm kar ke upar se dal de.
  7. Kewda water or rose water bhi dal le.
  8. Upar se thoda ghee ya makhan dale.

Seal karne ke liye atta gundh le or dhakan ki golayi me ache se atte ki ladi bana ke seal karde taki bhap bahar na nikle biryani ki.

  1. Ab aanch jala kar uspar bartan rakh ke kuch der use tez aanch par pakne de.
  2. Thodi der bad aanch dhimi karke upar tawa rakhe or tawe par biryani ka bartan rakhe. Taki biryani dam aanch par ache se banegi.

Ingredients

Thick yogurt                      2 cups

Garlic paste                       6 cloves

Salt                                    to taste

Red chilli powder              ½ tbsp

Milk                                    ½ cup

Ek bowl mei dahi le, usme garlic paste dale. Ab dahi me namak or mirch swad anusar dal kea chi tarha mila le. Dahi ka texture sahi karne ke liye aap thoda milk milaye or mix kar le.

Tips:- Raite ko refrigerator me rakh de or thandi he serve kare.
