  • 3 cup yogurt
  • 1 cup mango puree
  • 1/3 cup sugar
  • 1/4 tsp crushed cardamom

For Garnishing

  • 1/4 cup mango (small pieces)
  • 1 Tbsp sliced pistachios

  • For preparing yogurt put a cheesecloth over a strainer. Pour the yogurt over the cloth.Now place a bowl underneath the strainer to collect the excess of water.
  • Now gently squeeze the excess water from the yogurt. Do not squeeze out the yogurt.
  • Move the yogurt with the strainer and put the bowl into the refrigerator for at about 4 hours to drain excess of water. Periodically squeeze the excess water from it.
  • the yogurt will become thick and will form a paste-like consistency.
  • Add mango pulp, sugar, and cardamom powder to the yogurt and mix it well till sugar dissolves.
  • Chill the mixture properly before serving.
  • Garnish it with mango pieces and pistachios.
  • Serve chilled.

It is best described as a dessert beverage. This sweet dish is a delicious combination of layered Falooda with milk, sweet basil, and some vanilla ice-cream. This chilled beverage-dessert is a perfect way to cool during the summer heat.

  • 2 and a half cup milk
  • 3 Tbsp sugar
  • 1 Cup of fresh mango pulp
  • 2 Tbsp sweet basil seed
  • 1 packet of falooda (corn vermicelli)
  • 6 scoops of vanilla ice-cream
  • 1/2 cup finely chopped mangos (for garnishing)

  • Boil the milk with 2 tablespoons of sugar for around 15 minutes after the milk comes to boil. After the milk cools off, then refrigerate the milk as it should be chilled.
  • Cook the falooda in boiling water, till they are soft! Strain, and chopped them in few pieces and keep aside to cool. Then refrigerator till needed, and it is chilled.
  • Add about 2 tbsp of sugar to the mango pulp. Refrigerate the mango pulp and the chopped mango until ready to use.
  • Now soak the basil seeds in a bowl in about 1/4 cup of water making sure that the seeds are completely submerged. The seeds will start to swell and look transparent. Strain the seeds and keep aside in a small bowl.
  • The milk and falooda should be refrigerated until ready to use.
  • Now assemble the falooda, take a tall glass first and put 2-3 tbsp of mango pulp and few spoons of falooda and around 2 spoons of basil seeds. Then pour around 1/4 cup of milk and add about 1 or 2 scoops of vanilla ice-cream. Then again add some falooda and garnish it with chopped mango.

  • 1 cup graham crackers (fine crumbs)
  • 4 Tbsp unsalted butter (at room temperature)
  • Cream cheese (at room temperature)
  • 1/3 cup sugar
  • 1/2 cup heavy cream (chilled)
  • 1 tsp lemon juice
  • Few slices of fresh fruit of choice

  • First line a pan with wax paper.
  • Mix the cookie crumbs and butter together to combine properly.
  • Transfer the mixture to the prepared pan and press evenly to make it firm. Now refrigerate it for at least 30 minutes.
  • Using an electric mixer, beat the cream cheese and sugar in a bowl on a medium-high speed until it is smooth.
  • Now reduce the mixer speed and gradually add the cream to it, and lemon juice and gradually increase the speed to medium-high until a stiff peak form.
  • Spread the cream cheese mixture evenly over the crust and refrigerate it for at least 4 hours.
  • Before serving, garnish it with fruits on the top.
