Matar Paneer Masala  Recipe

Ingredients

1 cup matar

1 cup tomato puree (5 medium sized tomatoes)

Onion paste(2 big sized onion)

Hara dhaniya(2 tbsp)

Refined oil(2 tbsp)

250 grams Paneer(cube sized)

Salt 1 – ¼ tbsp to taste

Red chili powder 1 tbsp

Turmeric ½ tbsp

Coriander powder 1 tbsp

Garam masala 1 tbsp

Jeera ½ tbsp

Choti elichi 2-3

Dal chini small piece

Tej patta 1 leaf

Sugar 1 tbsp

Kaju 3-4 tbsp

Kishmish 3-4 tbsp

Malai 3-4 tbsp

Desi ghee 1 tbsp

Ginger garlic paste 1 tbsp

Degi mirch ½ tbsp

Kasuri methi 2 pinches

Procedure

  1. Sabse pehle ek pan lege or usme 2 tbsp oil dal dege. Oil garam hone ke baad usme khade masale dal lege – jeera, choti elichi or tej patta. Inhe halka bhura hone tak fry kare or fir ginger garlic paste dal ke thoda fry kar lege.
  2. Ab hum onion paste dalege. Hum paste ke sath he sabhi masale dal lege taki wo bhi ache se fry ho jaye onion ke sath. Haldi, lal mirchi powder, dhaniya powder or half spoon garam masala powder.(abhi hum garam masale ki sirf half quantity he use karege) or namak dal kar ache se mix krege.

  3. Jab tak pyaz ka pani puri tarha khatam na ho jaye tab tak paste ko ache se fry karege. Uske baad tomapo puree dal ke ache se mix karege.
  4. Ab tez flame par he hum tomato puree ke bad kaju or kishmish add krege taki unme bhi flavors ache se chle jaye. Sath sath hum matar bhi dal lege jisse wo bhi sabhi flavors ko ache se absorb kar le.
  5. Ab sabhi chezo ko ache se mix kar ke karib 10 minutes tak dhakan laga kar pakne de or flavours absorb karne de. Bilkul low flame par rakhe. 5 minute baad ek bar beech me check kare or stir kar ke waps dhakan laga de.

  6. 10 minute baad jab hum dekhege to grave oil chor chuki hogi or dry ho chuki hogi. Ab hum usme sugar add krege, sugar se sabhi flavours blend ho jate hai. Or sath he matar paneer ka taste khil ke aata hai or agar tamatar me khatas ho to sugar use bhi balance kar deta hai.
  7. Ab hum fir thoda salt add krege, ½ tbsp ke kareeb. Ab hamari gravy ache se pak gayi to hum isme malai add karege. Malai se sabhi flavours mild ho jate hai or taste ubhar ke aata hai, ache se mix kar lege.
  8. Ab isme half cup hot water mix karege or 5-10 minute tak pakayege dhakan laga kar medium flame par. 5 minute baad jab aap dhakan hata kar dekhege to grave ke upar aapko oil/ghee ki layer nazar aayegi, jiska matlab hai gravy ready hai. Agar aapko gravy zyada thick lage to aap half cut or garam pani add kare kyuki paneer bhi kuch gravy ka water absorb karega. Thoda garam pani dal ke mix karne ke baad paneer dale or halke hath se stir kare.
  9. Paneer ke sath sath aap upar se thodi kasuri methi sprinkle kar ke or 5-8 minutes tak dhakan laga kar use pakne de. Taki sabhi flavours paneer me bhi chle jaye.

Special tadka

Jab tak paneer ready ho raha hai hum ek special tadka ready karte hai. Is tadke se bohot acha colour aata hai or sabhi flavours bhi bohot ubhar ke aate hai desi ghee ke karan.

  1. Ek pan me ghee le or use garam hone de.
  2. Ab garam ghee me degi mirch dal or turant flame band kar le.
  3. Ghee or degi mirch ke ache se mix hone ke baad use matar paneer me dale or halka hila le.
  4. Ab dhakan laga ke 5 minues tak low flame par chor de taki degi mirch ka colour ache se sabzi pe chadh jaye.
