BANANA PANCAKES WITH CARAMELIZED APPLES:-

INGREDIENTS:- (Pancakes Recipe)

For caramelized apples:

  • 2 cups chopped apples
  • 2 Tbsp brown sugar
  • 1/4 tsp salt
  • 2 tsp butter

For pancakes:

  • 5 ripe bananas
  • 2 Tbsp white sugar
  • 1/4 tsp salt
  • 1 and a half cup flour
  • 1/2 cup corn flour
  • 1 tsp baking powder
  • 1/2 cup milk

For caramelized apples:

  • Take a pan and add apples, salt, sugar, and butter.
  • Add 1 tsp of lemon juice to it. Cook it over low heat.
  • Stir the mixture occasionally until the apples are soft and done.

For pancakes:

  • Mash the bananas with a fork.
  • Add sugar, salt and baking powder in both of the flours. Mix both of them properly.
  • Stir the milk until a pancake consistency is obtained.
  • Pour 1 tsp of butter in a non-stick pan.
  • Pour a pancake mixture into the pan.
  • Cook it over medium heat until brown. Flip the pancake to cook from both the sides.
  • Serve it with caramelized apples.

PREPARATION TIME:- 10 minutes

COOKING TIME:- 45 minutes

INGREDIENTS:- (Pancakes Recipe)

Filling

  • 1/4 cup chopped onions
  • 2 Tbsp oil
  • 4  sausages into round shape
  • 1/2 chopped baby corns into round shape
  • Half cup chopped beans
  • 1/2 cup sliced button mushrooms
  • Half cup chopped red bell peppers
  • 1 Tbsp oregano
  • Salt and black pepper as per taste
  • A handful of chopped fresh basil

Pancakes

  • 1 cup milk
  • 1 egg
  • 3 Tbsp melted butter
  • 1 cup ragi flour
  • 2 tsp baking powder
  • Half tsp salt

Yogurt Dip

  • 1 cup yogurt
  • 3-4 cloves of garlic
  • A pinch of salt
  • Crushed black pepper as per taste

Filling

  • Heat the oil in a large pan. Add the onions to it and saute for around 2 minutes on a low heat.
  • Now add the sausages and baby corns to it and let it cook for around 3-4 minutes or until lightly browned.
  • Then add the beans and cook for 2-3 minutes.
  • Add mushrooms and turn up the flame. Saute for 2 minutes until the water dries up.
  • Put red bell peppers, oregano, basil, and other seasonings and saute it for a minute and turn off the heat.

Pancakes

  • In a bowl, whisk the egg until it is light and fluffy. Pour the milk and butter and continue mixing for about 2 minutes.
  • Heat a non-stick pan and then reduce the flame.
  • Take the spoonful of the batter and pour it into the center of the pan. Spread out the batter in a circular motion to give the shape of a pancake.
  • Let it cook for around 1-2 minutes. Now carefully flip the pancake and cook the other side for around 1-2 minutes.

Yogurt Dip

  • Place the yogurt in a grinder, add the garlic cloves, salt, and crushed black pepper to it and blend for 30 seconds until it is creamy and properly combined.

  • 1/2 cup Maida
  • 1 egg
  • 1/4 cup milk water
  • 1/4 tsp salt
  • 1 tsp oil
  • 2 Tbsp oil for pancakes

For the filling

  • A cup of grated coconut
  • Single cup of broken jaggery
  • 1 tsp crushed cardamom seeds
  • Dry fruits

  • Mix the flour, salt, egg, some oil and enough milk to form a thin paste of consistency of pouring and rest it for 15 minutes.
  • Put a heavy-based frying pan over full heat and add one tbsp of oil.
  • Turn down the heat and turn the oil around the pan, and drain off the excess oil.
  • Turn up the heat again to full and pour the batter and swirl the pan around immediately to coat up the bottom.
  • Lower the heat and cook side until lightly brown & then turn over and brown the other side.

For the filling:

  • Dissolve the jaggery in water over low heat.
  • Add coconut and cardamom to it and cook till excess water dries out.
  • Place a little filling on a side of pancake, and roll tightly.
  • Serve it hot or cold.
