Hello friends aaj me aapke sath share karne wali hu ek bohot pasand ki jaane wali south indian recipe. Is recipe ka naam hai sambar recipe in hindi, jise 2 steps mei banana me aapko sikhaugi. Chaliye ek tasty or aasan sambhar recipe in hindi shuru karte hai;-

Step 1 – Boiling sambar & veggies (Sambar recipe in hindi)

Ingredients

250 gm Pigeon Pea / arhar ya tuvar dal

1/2 tsp turmeric / haldi

1 tbsp salt / namak

2 glass of Water

1 onions slices / pyaz

1 brinjal / baigan

1/2 cup bottle gourd / lauki South Indian style tasty & easy sambar recipe in Hindi

5-6 ladyfinger / bhindi

2 carrot / gajar

Procedure

  1. Arhar ki dal ko half hour ke liye pani me chor de.
  2. Pyaz, baigan, lauki, gajar or bhindi ko bade tukdo mei kat le.
  3. Pressure cooker le or use flame pe rakhde or usme bhigoi hui arhar dal dal de.
  4. Ab cooker me pani, kati hui sabzia, namak or haldi dal ke ache se mila le.
  5. Cooker ka dhakan laga le or ek whistle aane ka wait kare. Ek whistle aane ke baad flame low kar de or 3 whistle tak pakaye or flame band kar le.
  6. Cooker ka pressure jab tak khud na khatam ho tab tak cooker ka thakan na khole.

Tips;

  • Sabzia bade tukdo me he kate kyuki boil hone ke baad wo dal hilate samye mash ho jati hai. Chote tukdo mekati hongi to bilkul he gal jayegi.
  • Apne pasand se aap koi or bhi sabzia bal sakte hai.
  • Pyaz ko char tukdo me kat ke uske slices alag alag kar ke dalna acha rehta hai.

Step 2 – Sambar tadka (Sambar recipe in hindi)

Ingredients

2 tbsp oil

1/2 tsp Fenugreek leaves / kasuri methi

1 tsp black mustard seeds / kala sarso beej

1 tbsp pigeon pea / Safed urad dal

2 pinch asafoetida / hing

5 inch chopped garlic / lehsun

2 inch grated ginger / adrak

12-15 curry leaf / kadi patta

1 chopped onions / pyaz

2 tbsp Sambar Masala

1 chopped tomato / tamatar

1 tbsp kashmiri red chilli powder / kashmiri lal mirch powder

2 whole dry red chilli / sabut lal mirch

2 chopped green chilli / hari mirch

1 tbsp chopped coriander leaf / dhaniya patta

2 tbsp Tamarind pulp / imli

Procedure

  1. Pan/kadhai ko flame pe rakh de or usme oil dal ko dal ke garam hone de.
  2. Oil garam hote he usme urad dal, kali sarson, methi, kata hua lehsun or sabut lal mirch dal ke fry kar le.
  3. Ab pyaz dal ke mila le, upar se hing, kaddukas kar ke adrak, barik kati hui hari mirch dal ke fry kare. Kadi paata bhi dal de or ek minute tak pakaye.
  4. 1 minute baad tamater dale or 1/2 tbsp namak dale.
  5. 2 minute tak pakaye, paz or tamater ke ache se gal jane ke baad kashmiri mirch powder dal ke mila le.
  6. Ab sambhar masala dal ke mila le, last me imli ka pulp dale or mila le. Jitna khatta pasand ho us hisab se he dale kyuki hamne tamatar bhi dale hai.
  7. 30 seconds tak pakaye or flame band kar le.
  8. Pressure cooker khol ke dal or sabzia ko check karte hai, or wo bilkul ache se pak gyi hongi. Cooker ke niche fir se flame jala lete hai.
  9. Banaya hua sambhar tadka cooker me dal de or bohot he ache se sabhi chezo ko mila le. Dal ko ubal aane tak full flame pe rakhe or ubal aate he flame low kar ke 5 minute tak pakaye. taki sabhi flavors ache se dal mei chale jaye.
  10. Kati hui dhaniya patta dale or sath he sath namak or masale check kar le kuch bhi kam lage to or dal ke mila le. Sambar tayar hai.

Aasan or swadisht malai mushroom banana sikhe – Mushroom recipe hindi mei

Tips:-

  • Kashmiri mirch se acha colour aata isliye hum use use karege, agar aapke pas na ho to normal red chilli powder he dal de.
  • Dhyan rahe ki humne dal ubalne ke time bhi namak dala hai. To namak utna dale apne swad anusar ki wo zyada na ho jaye.
  • Imli ka pupl banane ke liye aap ek finger jitna imli ka tukda le or use garam pani mei bhigo le. 1/2 hour baad imli ko mash kare or beej nikal le, imli pulp ready hai.
  • Sambar gadha lage to or pani mila le par dhyan rakhe ki pani garam kar ke he dale. Sambar masala dale 1/2 tbsp agar taste kam lage.

Serving Sambhar

  1. Aap sambar ko kisi serving bowl me nikal le or upar se kadi patta or dhaniya se garnish kar le.
  2. Sambhar ko idli, dosa, rice or patha kisi ke sath bhi serve kar sakte hai.
